Although I have lived in Castleknock for most of my life, I rarely look around here and think “wow that’s interesting” ! On my quest for castles and adventures, I have failed to mention that I grew up pretty much a 10 minute walk from the ruins of a Norman castle.

When we were kids, we would sneak onto the grounds of The Castleknock College to try get a close up look at the castle. I was always a bit wary as it is haunted by the Ghost of the White Lady. There is also a graveyard beside the castle, which adds to the eerie atmosphere. Oh and I can’t forget the  cursed warriors who are buried under the observatory on the other hill.  There is quite a but of mystery here!!

I’ve never paid too much attention to the Castle on the Hill, but after doing a little research, it turns out to be pretty interesting!

Before the castle was built, the site was used as an ancient burial ground, and human remains, possibly dating from Pagan times were found.

Castleknock Castle set the scene for many bloody battles and changed hands through the years.  People who held the castle include Hugh Tyrrell – The Baron of Castleknock  and  Robert the Bruce !

Sadly nowadays it is in ruins, and not open to the public.


A Hidden Gem

It’s hard to believe that this spectacular venue is only 10 minutes away from our bakery. Every time I deliver a wedding cake here, I am transported back in time. With the log fire burning, traditional music playing and a huge collection of antique and collectible memorabilia, The Anglers rest is without a doubt a stunning wedding venue. A hidden Gem!


The Anglers Rest is hosting a wedding Fair on Sunday 21st of February. I am looking forward to showcasing some of my lovely cakes at the fair.. and especially looking forward to a nice meal in the restaurant downstairs afterwards. The food is top notch!!

Buttercream Beauties

Without a doubt, some of the simplest cakes can be the most beautiful.  We get a lot of orders for buttercream finished cakes, which are a joy to make. I love the rustic look of these cakes. You can create a dessert table with a mix of different sized cakes. Alternate texture / decoration / flavour for a bit of variety. You may like to add a few extra items, such a cupcakes, macarons or cakepops to finish the display!

Use mismatched cake stands , china teacups and tableware to create a beautiful vintage display.

2016, Year of Cake!


It’s been a while since our last blog post! A lot of new and exciting things are happening here at Cocoamoiselle! First and most excitingly, we have expanded! Our Bakery is now roughly twice the size. We have also added to our wonderful team. With our brand new bigger and better bakery, we are expecting great things for 2016. That’s why we have decided that 2016 is the year of cake!

We have some lovely and unique wedding cakes coming soon as well as birthday, celebration, office and special occasion cakes. Other tasty treats including  cake pops, cupcakes and macarons (just to name a few) will still be as great as ever and with the added space we are able to produce more and more!

Tankardstown House, Slane, Co. Meath

Tankardstown House

OK  so it’s not technically a castle, but Tankardstown House is a truly amazing place to celebrate your wedding day. Built on a large country estate in the 18th century, the manor house oozes indulgence and luxury.  The Orangery , which seats up to 250 guests, is one of the most beautiful rooms I have ever laid eyes on, particularly when is it set up for a wedding. The attention to detail is second to none. The tables are always beautifully set with shiny cutlery and wine glasses sparkling in the sunlight.

As the sun goes down, candles on each table twinkle and the sound of music and chatter fills the room, happy guests mingle and the scene is set for the perfect evening.

I love setting up cakes at Tankardstown House as they have the most beautiful marble topped table with a large ornate mirror behind it. The perfect backdrop for your wedding cake display.

Vegan Dessert Table

A lot of chefs run a mile when they hear the word Vegan. I on the other hand was excited by the challenge of creating a vegan friendly dessert table. Part of my training in Bonnie Gordon College prepared me for special diets, so I began researching and testing recipes immediately!
Finding substitutes for butter, milk, cream and eggs wasn’t difficult, but getting them to have the same consistency and taste as regular dairy / eggs was a little trickier.
I tested some of the recipes 3 / 4 times, adjusting the quantities of this and that until I was happy they were just right.
All in all, I was pretty happy with myself and the end results, as the non vegans enjoyed the dessert table just as much as the vegans, and as I returned to the venue the next day to collect the cake stands, I found a group of guests having vegan chocolate cake for breakfast!

Cahir Castle

The drive to Kilshane House, Tipperary is about 2 hours from the bakery and dotted with heritage and amenity signs. One that I passed several times and couldn’t ignore was Cahir Castle. Knowing I had to be back in Dublin early I didn’t have much time after my cake delivery, but it was well worth the visit.
Built on the banks of the River Suir, Cahir Castle is one of the largest and finest examples of a medieval castle in Ireland. Originally an earthen fort (or Dun) in the 3rd century, and subsequently a stone fort (or Cathair), the site has changed hands, been rebuilt, extended and evolved over the centuries into the mighty castle standing today. It has survived many attacks and seiges and was beautifully restored when it was passed over to the Irish State following the death of its last owner. It has been beautifully restored and preserved.
